Food is science, and as such, there is no reason I can see that this periodic table of meat should not exist. I came across this older but still incredibly valuable piece of food culture from a friend on Facebook who owns and runs (quite fittingly) The Whole Beast Artisan Salumeria. You can check out his website here. As meat goes, this table does a pretty good job of coverage, but is definitely biased towards Western tastes and ingredients. I do like their basic chemical formulas, however only Wylie Dufresne may understand you if you try to order a KbH at a restaurant.
