I send out my whole hearted Kudos and several gold stars to the talented baker who created this blast from the past culture cake. Although I FUCKING HATED the Rubik’s Cube (No offense Ernő Rubik, it’s actually a really cool puzzle, I just could never figure it out…), this cake brings back good memories of the 80s.
The cake is a Battenburg, constructed of rectangular pieces of alternatively coloured Victoria sponge cake, sandwiched together by jam and held together with walls of marzipan. They did some engineering and colour tweaks to achieve the Rubik’s look. This particular cake was flavoured with orange, lemon and almond.

A cool tidbit is that a few days after she posted the recipe online, the original creator of the Rubik’s Cube dropped her a line and complimented her on the cake.
