Bacon and egg cupcakes!

These breakfast cupcakes look like seriously good times.  Easy, quick, and can be modified.  Take a slice of ham or bacon and put it into the cupcake wrapper.  Simply break in an egg and bake!  You can also add some yumminess underneath the egg… perhaps some cheese?  As some of you may know I hate the trend of cupcakes, but I can never hate on breakfast… it’s the most important meal of the day…

UPDATE!  Originally, I just posted this as a cool idea, but I had questions in the comments, so I thought I’d share with you the best way to bake eggs.

How to Bake Eggs

Preheat oven to 325° F. Place oven rack in middle of your oven.

Bake in preheated oven approximately 12 to 14 minutes, depending on number of servings being baked. Check the eggs after about 10 minutes baking time. Rotate the dishes if the eggs aren’t cooking evenly. When done, the whites should be completely set and the yolks beginning to thicken but not hard. Remember the eggs will continue to cook after being removed from the oven. You can also add fried hashbrowns to the bottom, or other yumminess.

If you want to use bacon, or want your ham crispier, cook them a little first. If using bacon, make sure the strips are cooked off and drained, or face the consequences…

        Daft question, after cooking, could these be cooled, and taken to work the same/next day, or are they to eaten after cooking?

          I wouldn’t recommend doing that. If you like soft yolks, that could get messy. I’d eat ’em up right out of the oven.

      Hmm… maybe. You’d need to make sure the temperature wasn’t too high and standard throughout. I wonder if tinfoil would work too? Great idea!

    I think using the foil cupcake liners would be a nice option and may help in a better heating. May be just a thought.
